Update: Tried installing StartUp Manager and unchecking the 'Show text on boot' box. Didn't work. Tried reinstalling usplash and usplash-theme-ubuntu. Didn't work. The word "splash" certainly appears in /boot/grub/menu.lst. Strangely when starting StartUp Manager i get the following:
