Had a quick google and couldn't find anything...
When Photo Booth is running, the image on screen is a mirror that, when the 'Take Picture' is pressed, can be automatically reversed so that it's the right way round.
I'm trying to get it to show the correct image in the first place!!!
Any ideas?

Is Edit/Auto Flip New Photos what you're looking for?
I'll have a better look when I get home; my work computer lacks a webcam, so many of Booth's options are unavailable to me.

Not really - I'd like the live image un-mirrored so that flipping it would be unnecessary. It must be possible or the cam would send a reversed image while doing live chat.

Not sure what exactly you mean?? If you go to the Edit menu and de-select the 'Auto flip new photo's' option that gives you the normal image. There are only two states flipped and un-flipped if neither is any good I'm confused!

When Photo Booth comes on, the live image that you are looking at (wave at yourself ) is a mirror image.
I want it to be real life, not mirrored

OK, now I get what you mean! 
So I've just tried it myself (waving and all!) and the image that you see cannot be changed. You can only change it after the photo has been taken. Which you do by going to the Edit menu or holding down 'Command-F'.
